Egg is very healthy for us. Most of us love various dishes made with eggs. Egg has found its permanent place in Indian cuisine. The nutritional value of eggs is not unknown to us. Egg is a source of vitamin A and it has calcium, magnesium, vitamin D, etc. Egg is a rich source of protein. There are many kinds of health benefits of eggs. We all love to take many kinds of foods with eggs In our meals. We eat omelet, sandwich, boiled eggs, etc. Another delightful recipe of egg is egg curry. Egg curry recipe is very simple and at the same time, it is loved by all, by elders and children.Egg curry recipe is full of sweet memories to me and maybe to some people like me. It reminds me of my childhood when my grandmother used to cook for me this awesome recipe. When I grew up and got married, my mother-in-law taught me this recipe. My husband is a great fan of this particular dish. In my family, egg is a favourite of all. When I go for an outing along with my family, I ask for egg curry in hotels. Let us have a quick look at the awesome and very simple recipe of egg curry.
Ingredients
Eggs (three), potatoes(two medium sized), Onions(two-three finely chopped), capsicum(half finely chopped),tomato(half chopped nicely), you can use tomato sauce instead of tomato approximately two-three table spoon, green chillies (three finely chopped), ginger paste(half table spoon), garlic paste(approximately half table spoon), garam masala(according to taste).you can use less amount of garlic paste if you don't like garlic paste much.
Garam masala---It is a blend of so many spices like cloves, cardamom,cinnamon, black peppercorns,etc.You can find garam masala in dust form in readymade pouches. You can find it any Indian grocery shops.It is used for seasoning. It is also used for garnishing.
Process
"Bengali egg curry" is really delicious. It becomes more tasty in winter season.In winter, we have a picnic mood. The picnic spirit unites us and egg curry then becomes a very good option to eat and enjoy.When we tremble in the cold of winter and we are served with hot and spicy egg curry with rice,we experience a heavenly joy. When we are unwell and we do not want to make so many dishes for dinner or lunch we can prepare this recipe at our home. Here, I want to share my experience when I was a teenager school going girl. One Sunday winter, Me and my friends decided to have a small picnic in our play ground. We arranged a stove, all the essential commodities and our elders like grand mothers aunties happily helped us to cook egg curry, rice, dal, and fried potatoes that day. We became so happy that we cooked some thing our selves with the help of our elders. We must follow the following steps in order to make this egg curry or which is called "dimer jhol" in Bengali.
Step1------ First,we have to boil the eggs nicely.Eggs should be hard boiled.Along with eggs, we have to boil the potatoes. Each potato should be cut in to four pieces.After boiling eggs and potatoes we should peel off the outer skin of the potatoes and shells of eggs.
Step2------ We should heat mustard oil (.approximately threee-four tablespoon) in a pan or cauldron. Then smear some salt and turmeric powder on boiled eggs and fry those eggs into the pan or cauldron untill the eggs become brown or a bit red. Then we should fry the boiled potatoes in the same way.
Step3----- Now, pour some more mustard oil in the cauldron or pan if required. Next, we should give two to three pinches cumin seeds, one bay leaf in the hot mustard oil as condiments. We should add nicely chopped onions, capsicum,green chillies, tomato sauce or pasted tomato, chopped or pasted garlic two to three pinches and fry them for a few minutes.while frying, we should add salt, turmeric powder,sugar according to taste.
Step4------ Now, in this step, add some water so that all the vegetables including capsicum, onions, etc. get perfectly boiled and all the spices are nicely cooked. We should cover the cauldron or pan so that all the spices and vegetables gets perfectly mixed and boiled so we'll. This will bring a proper taste to the dish. We should stir them again and again in order to check that onions and all the vegetables are not burnt. We may have to mix some water if while boiling the water gets dried.After all the vegetables are cooked we should again add one to two cups. Of water approximately and cook for some minutes. At this time we should add potatoes and eggs in that curry and cook for a few minutes so that they get spicy and tasty.At this stage we should check that salt,sugar and chillies are perfectly mixed in proper quantities.when. the quantity of gravy becomes half we should add garam masala. We can also sprinkle finely chopped coriander leaves but it is optional.Now, our egg curry is completely ready to serve.
NOTE---_--- If one does not want to cook egg curry with onions he or she should use cumin paste one tablespoon and follow the same process. That would also be a delicious egg curry recipe.

Egg can be cooked in various ways.Egg is versatile and at the same time a very tasty ingredient.We should serve the awesome egg dish with chapati, paratha, nun poories,etc.we can also eat this accompanied with rice, fried rice.
